The ‘Marrone del Mugello’ Protected Geographical Indication is reserved for fruits meeting the conditions and requirements set out in its production specification.

Marrone del Mugello derives from a series of ecotypes currently referred to by the name of the locality and/or municipality of origin but all traceable to the Marrone Fiorentino variety.

Chestnut plantations intended to produce ‘Marrone del Mugello’ must be found in environmental conditions and must be conducted with cultivation techniques that give the product its specific quality characteristics. Chestnut groves located between 300 and 900 metres above sea level on land with the required location, exposure and soil characteristics are considered suitable.

Any use of synthetic fertilisers and phytopharmaceuticals is prohibited in production facilities. The production efficiency is set at a maximum of 15 kg of fruit per plant and 1,500 kg per hectare.

An important distinction that must be made is that between ‘chestnuts’ and ‘marron chestnuts’, which, although often used as synonyms, actually indicate two very different products from a morphological, qualitative and commercial point of view:

Chestnuts: the term ‘’chestnut‘’ encompasses numerous varieties derived from the European chestnut tree, widespread in the different chestnut-growing areas of Italy. More elongated in shape and dark brown in colour, chestnuts have an inner skin that penetrates deep into the pulp, in some cases to the point of splitting it (in which case they are referred to as split fruits), which often makes them difficult to peel. From a marketing point of view, actual chestnuts are smaller in size and generally cheaper than marrons, compared to which they are less valued. The size varies from 45 to 100 fruits per kg.

Marron chestnuts: intended both for industrial processing and fresh consumption, they are the most sought-after variety on the market where they are sold at high prices. Chestnuts are considered ‘marrons if they are not split, have a more 'rounded' shape, a light brown, slightly streaked skin and a sweeter, more fragrant taste than chestnuts. Among the main characteristics of ‘marrons’ is the fact that the episperm (i.e. the skin of the fruit) does not penetrate the flesh and this makes them easier to peel. They ripen towards the end of September. They have a medium to large size (55 to 70 fruits per kg).

History

The Chestnut belongs to the Fagaceae family, which also includes the genera Fagus and Quercus. The current taxonomic classification of the genus Castanea is based on the study carried out by Richard A. Jaynes in 1975, in which it was assumed that the plant originated in China. Two migration routes would then have developed from this tree antecedent: one towards Europe, which would have given rise to the current species Castanea sativa, and one towards America, from which the Asian species would derive. These include the Castanea crenata and Castanea mollissima cultivated in China, Japan and Korea, as well as the Castanea dentata cultivated in America. Chestnuts comprise thirteen species native to the temperate zones of Asia Minor, Mediterranean Europe and the Eastern United States. Its name is derived from the Greek kàstanon, in Latin castanea. The choice of variety must consider the needs of the market, where four distinct variety groups are generally considered: Marrons, Chestnuts, Euro-Japanese Hybrids, Japanese Chestnuts.

The chestnut varieties cultivated in Italy are very numerous, with each cultivation area boasting different types, named according to the place of production, which have almost identical characteristics to the fruit produced elsewhere. These are probably ecotypes, varieties selected based on the environmental characteristics of cultivation, originally from a few species slightly differentiated by the influence of soil conditions and climate in the different cultivation areas.
