Curiosity
The almond is a fruit harvested from a very long-lived tree of the Rosaceae family (scientific name: Prunus Amygdalus) that grows up to 10 m in height. The flowers are white or slightly pinkish with 5 petals.
The seed may range in colour from brown to ochre and is covered by a tegument called a perisperm, which may be smooth or wrinkled. Most of the cultivars are self-sterile. Blooming usually takes place in early spring or late February, if the climate is mild.
The almond tree is sensitive to the climatic conditions of the winter and spring months. The plant's preferred climate is one with mild winters, no spring frosts and no hot, dry summers. Rain and cold are two important conditions for the development of the shoots and almonds.
From the third year of the plant's life, a good quantity of almonds can be obtained, however it’s necessary to wait until its sixth year to have a satisfactory production. Indeed, the plant's productivity increases with age, until it reaches its maximum at around eighteen years of age: 75-90 quintals of almonds with hull and shell per year, which is maintained for many decades.

History
In ancient times, the almond tree first spread to Greece and later to Italy. The origin of the plant is undoubtedly to be found in Central Asia, as there are numerous wild species in all mountainous areas.
The introduction of the almond tree to North America dates back to the 16th century, while the plant was brought to Chile in the second half of the 17th century. The Romans called the almond tree by the name of ‘Greek nut’, that was mentioned by Virgil, Horace and Columella in their manuscripts. The Romans contributed to spreading the almond tree, by bringing it to Alpine foothills and beyond.
The Arabs were well aware of the plant’s properties and made them known to the countries of the Mediterranean basin in all official pharmacopoeias and traditional medicine in the Middle Ages. Sweet almond oil is used for preparing ointments, emulsions, liniments and medicinal soaps and is also widely used in perfumery and cosmetics.

Storage
You can store Italian shelled almond pieces in cool, dry places away from heat and moisture. Here are 4 useful tips:
- The best way to store Italian shelled almond pieces is in a refrigerated environment. Nuturally Italian shelled almond pieces can also be stored at room temperature during the winter season due to low temperatures. During summer, however, it is advisable to store the product in the refrigerator or in the coolest possible environment, as increased temperatures could encourage decay.
- The ideal container for the storage of Italian shelled almond pieces is glass. Indeed, because of its composition it is impervious to chemical agents and gases, and, as it has excellent insulation properties, it holds the initial temperature for longer than other materials. It is even better if the glass is coloured: using coloured glass blocks the entry of certain wavelengths of light (including ultraviolet), and thus certain nutritional and organoleptic characteristics remain unaltered.
- The type of closure of the container is also important as an airtight cap ensures that the food is protected from excessive contact with oxygen that can lead to lipid oxidation and encourage the growth of aerobic bacteria.
- The best kind of storage environment is one which is well ventilated because ventilating the premises keeps internal humidity under control, which otherwise could escape from windows, thereby guaranteeing the right balance to lessen the onset of mould.
