Commonly known as walnuts, Juglans is a genus of plants in the Juglandaceae family.
The walnut is a deciduous tree, with a height of between 10 and 40 metres, featuring pinnate leaves 200–900 mm long and with 5–25 small leaves. The best-known species is Juglans regia, known as fruit walnut or white walnut. It naturally grows in North and South America, Asia and Europe. The fruit, the walnut, is a drupe of ovoid shape covered by a husk which is green at first but then turns black when it ripens. The shell, which is woody and leathery, contains the edible part inside: a kernel with high lipid content.
The harvest, which varies according to the areas and cultivars, begins at the end of August and continues until November. Generally, harvest time begins as soon as the walnut kernels appear to be cracked but not completely open, otherwise the shell will blacken. In Italy, the harvesting is mostly done through hand-pole beating, i.e. using long sticks to beat the fruit off the branches. In California, by contrast, all harvesting operations are highly mechanized and the nuts are removed from the tree by means of a mechanical shaker.
Among the nuts, the walnut is second in the world in terms of spread and cultivation (FAO Stat, 2008). The world's largest producers of walnuts are China, the United States and Turkey. California alone produces about 2/3 of the walnuts sold globally.
Walnuts are eaten both fresh and used as ingredients for sweets, sauces and bakery products. Nocino, an excellent Italian liqueur, is made from walnut.
In Jammu (India), walnuts are widely used as an offering to the Mother Goddess Vaisnav Devi and are generally used as a dry food during the holiday season. Walnuts are a traditional feature of Iranian cuisine.
Among nut-loving animals are crows, who drop the nuts from a considerable height on a hard surface to open them and feed on the contents.
Walnut leaves and kernels with their bitter, tonic and astringent properties are used in folk medicine and in the pharmaceutical industry for dyspepsia and inflammation of the gastrointestinal tract. One can also make astringent baths using an infusion of the leaves.

The name of the genus comes from the Latin ‘Jovis’, which means ‘Jupiter’, and ‘Glans’, which means ‘Acorn’: the ‘Acorn of Jupiter’.
Species related to walnuts have been discovered in stratifications belonging to Miocene geological era. Archaeological finds indicate that walnuts were used as food as early as 9000 years ago. Indeed, ancient European and Asian civilizations were familiar with the walnut tree.
Numerous scholars have researched extensively to establish where the species originated. The most credible theory is that the walnut is native to China or the Himalayan Massif.
The walnut was spread West by the Greeks and then by the Romans, for whom the fruit was a symbol of fecundity and was handed out during wedding ceremonies. In mythology, it was also known to the Gods: indeed, it is said that Jupiter himself used it in his banquets on Mount Olympus.
The spread of the walnut throughout Europe as a grown tree was the work of the Romans, whose legions brought the plant to the areas of the Moselle and the Rhine, as well as to Spain, France and England.
Major Latin poets, including Virgil and Ovid, mention the walnut. The archaeological excavations of Pompeii and Herculaneum unearthed charred nuts which had the characteristics similar to those of the Sorrento variety.
One of the legends about the walnut tree says that witches held their Sabbaths in its shadow and that therefore the latter was bad luck for both humans and animals.
