Product Fennel

Curiosity

Fennel belongs to the Umbelliferae family, like carrots, celery, and parsley. It consists of a white or pale green bulb with stems crowned by feathery leaves, acanthus to which grow the flowers that produce the fennel seeds. Bulbs, stems, leaves and seeds are edible.

The aromatic taste of fennel is similar to that of liquorice and aniseed.

History

In Mediterranean areas, fennel has a long history as a medicinal plant. The ancient Greeks called fennel maraton: one of the greatest battles of ancient times, the Battle of Marathon, was indeed fought in a field of fennel.

Traditionally, fennel was mainly associated to digestive health and to this purpose it has been cultivated in Europe from ancient times, especially in the Mediterranean areas and the Near East. Today, the United States, France and India are the main producers of fennel.

Uses

How to use fennel seeds?

Fennel seeds are ideal for adding flavour to pasta, main courses, and salads, or for spicing up bread and baked goods, liqueurs, tea, and infusions.

Fennel seeds can be ground, crushed or used whole. To increase the intensity of the flavour, it is recommended to pound the seeds in a mortar or to roast them.

Storage

You can store organic fennel seeds in cool, dry places away from heat and moisture. Here are 4 useful tips:

  • The best way to store organic fennel seeds is in a refrigerated environment. Nuturally organic fennel seeds can also be stored at room temperature during the winter season due to low temperatures. During summer, however, it is advisable to store the product in the refrigerator or in the coolest possible environment, as increased temperatures could encourage decay.
  • The ideal container for the storage of organic fennel seeds is glass. Indeed, because of its composition it is impervious to chemical agents and gases, and, as it has excellent insulation properties, it holds the initial temperature for longer than other materials. It is even better if the glass is coloured: using coloured glass blocks the entry of certain wavelengths of light (including ultraviolet), and thus certain nutritional and organoleptic characteristics remain unaltered.
  • The type of closure of the container is also important as an airtight cap ensures that the food is protected from excessive contact with oxygen that can lead to lipid oxidation and encourage the growth of aerobic bacteria.
  • The best kind of storage environment is one which is well ventilated because ventilating the premises keeps internal humidity under control, which otherwise could escape from windows, thereby guaranteeing the right balance to lessen the onset of mould.
