Cannabis sativa is an annual herbaceous plant native to Central Asia, now acclimatized in Europe and America. The plants' height varies up to five metres, and it has resinous and angular outgrowths. Non-basal leaves are alternate, palmate and lanceolate, with sharp tips of up to 10 cm in length. Its fruit is the brown achenes that hold the seeds tight. 

Each part of the plant is harvested differently, depending on the purpose. 

Hemp seeds are mainly used to extract oil that is used as cooking or lamp oil, or for lacquers and paints. 

The flowers of the female plant are arranged in racemes and can produce hundreds of seeds. A hemp plant in the stage of vegetative growth requires more than 12–13 hours of light per day to remain vegetative. Flowering usually occurs when night cycles last 12 hours. 

Humans have always grown hemp as a source of industrial fibres, food and seed oil, for recreational, religious and spiritual uses, and as a medicinal herb. 

In Italy, industrial cultivation is permitted under Ministerial Circular of Ministry of Agricultural, Food and Forestry Policies n. 1 rec. 200 dated 8 May 2002, but is limited to certified hemp varieties especially selected for their negligible THC content — the main active pharmacological and psychotropic substance within it. 

Hemp seeds can be eaten raw, ground into powder, germinated, or processed into vegetable drinks and hemp juices. They can be used to prepare herbal teas and used in the preparation of bakery products. Fresh leaves can be used to prepare salads.

A 2012 study examined 40 samples extracted from hulled seeds and hemp seed shells, using different solvents. The study also evaluated its ability to counteract free radicals and its total phenolic content. Correlation analyses indicated that the antioxidants in hemp contained in two extracts were suitable for evaluating its anti-oxidant capabilities. Indeed, the two compounds showed a significant counteractive and protective effect against the oxidation in vitro of human low-density lipoproteins compared to that shown flaxseed, grapeseed and soybeans extracts. The results suggest that hemp seed extract is a powerful natural source of antioxidants and could bring benefits to oxidative stress prevention.
